Strata is currently a one-man show with a great support team! Evan first began his journey into the remarkable and ancient world of steels and stones while he was working at Bi-Rite Market, a premier specialty market located in San Francisco, California. At Bi-Rite, Evan found himself located just around the corner from one of the most inspiring cutlery stores in the world Bernal Cutlery. Specializing in hand-made knives and whetstone sharpening, Bernal opened Evan’s eyes to craftspeople all over the world pushing the boundaries of how knives can be made and perform. The shop and knowledgeable staff became a huge resource, sharing invaluable information about knives, steels, and sharpening skills and techniques.
Evan has since logged thousands of hours sharpening, and has made numerous connections to makers, sellers, enthusiasts, and professionals all over the world. With these resources and experiences at his disposal, Evan continues to improve his skills and knowledge everyday, and is excited to share it with those who are interested in the place he now calls home, Portland, Maine.
Evan spent a year as the head butcher at Rosemont market on Brighton Ave, which allowed him to test out different knives and steels on a plethora of different products and projects, from whole animal breakdown, to fine detail work. This production and service experience, combined with his passion for cooking at home, gives Evan insights into both the needs of fast-paced professional service providers, as well as home chefs in a more relaxed setting.
